Kokebi Coffee Birchall Iced Tea Recipe

Tea, chai, cuppa or brew. Whatever your name for it, this famous aromatic beverage is loved the world over and is undoubtedly synonymous with us Brits. However, our next Summer recipe has its origins over the pond in the United States... The Iced Tea.

Iced Tea was first mentioned by cook book writer Mary Ann Bryan Mason circa 1870 and later popularised by Richard Blechynden who introduced it at the 1904 World's Fair in St. Louis. Its popularity grew quickly leading to the introduction of new cutlery sets including the long handled teaspoon, well suited to stirring sugar into tall glasses.

This is arguably a cause and effect of the popularisation of cocktails around the same time, which is why our Iced Tea recipe is complete with optional extras to give your summer afternoon out in the sun a little more punch!

At Kokebi Coffee we strongly believe that any quality recipe should always impart its flavour to exceptional ingredients. This is why we have used a deliciously strong breakfast tea bursting with flavour, Birchall Tea's Rainforest Alliance Certified™ Great Rift Breakfast Blend.

Great Rift Breakfast Blend is sourced exclusively from estates across East Africa, from Rwanda through to the Great Rift Valley in Kenya where some of the very best tea in the world is grown.

So here it is our Kokebi Iced Tea recipe, which is as delicious as it is refreshing! The perfect summer beverage that's as easy to make as it is to drink.

Ingredients:

  • 5 Birchall Great Rift Tea bags
  • 2 Tbsp caster sugar
  • 1 Tbsp runny honey
  • 2 Lemons, juiced
  • 3 Large oranges, 2 juiced 1 sliced
  • A small bunch mint (approx 5 stems)
  • OPTIONAL EXTRA: 400ml Pimm's No 1
  • Ice, to serve

Method:

  • Pour 1.5 litres of boiling water over the tea bags, then stir in the sugar and honey. 
  • Leave to infuse for 10 mins, then strain and transfer to the fridge to chill.
  • Pour the chilled tea into a large jug, then stir in the: lemon juice, orange juice and slices and mint.
  • OPTIONAL EXTRA: Pour in 400ml Pimm's No 1.
  • Fill the rest of the jug with ice and stir well.
  • To serve, pour the iced tea into tall glasses with lots of ice.
